I'm not a great lover of broccoli, but I ate some broccoli cornbread last night and it was delicious.



2- Small boxes of Jiffy corn bread mix

1- Small container of Cottage Cheese

10oz.- Finely chopped broccoli

4- Eggs



Combine and mix together, Melt 1 Stick of butter. Pour butter then other ingredients into 9x13 baking pan. Bake 40min @ 315 degrees.



It's just a little different twist on cornbread and like I said it's delicious.

I love Broccoli Cornbread but if you want to kick it up a notch try this.

1 box chopped broccoli

12 oz cottage cheese

1 chopped onion

2 boxes jiffy cornmeal mix

1 stick melted butter

texas peat

salt & pepper

2 eggs

8 oz cheddar cheese





the more texas peat an cheddar cheese you use the better it is
